Chicken Fideuá Recipe

The authentic fideuá comes from Gandía, in the Valencian Community, and is made of trash, fish and/or shellfish. It differs from arroz a Banda, among other things, by the use of thick noodles instead of rice. These main ingredients and a few others lead us to this unmistakable and excellent dish. Do you dare to prepare it?

On this occasion, we are going to prepare a delicious chicken fideuá, a recipe little different from the traditional one with fish, but equally easy and tasty. The advantage of this version is that its ingredients are usually cheaper and it is more common for them to already be in our kitchen. Keep reading and discover how to make Valencian chicken fideuá.

Ingredients to make Chicken Fideuá:

  1. 1 chicken breast
  2. 1 cup noodles of nº 3 or 4
  3. 1 Italian green pepper
  4. 1 sweet onion
  5. 3 garlic cloves
  6. 3 glasses of water or chicken broth
  7. 2 tablespoons of crushed tomato
  8. 1 teaspoon salt
  9. 1 pinch of ground black pepper
  10. 1 small glass of white wine
  11. 1 teaspoon of turmeric or saffron

How to make Chicken Fideuá:

  • Cut the chicken breast into medium pieces and fry itin a jet of very hot oil. Add salt to taste and see moving the meat so that it browns on all sides. When it is golden, remove it and reserve it.
  • With the same oil used to fry the breast pieces, also sauté the pepper, onion and garlic. Cook these ingredients over medium heat, stirring occasionally, for approximately 5 minutes.
  • Pour in the wine and let the alcohol evaporate. Next, add the tomato and mix. At this point you can put a pinch of salt, the idea is to distribute small amounts of salt so that the chicken and vegetable fideuá is not bland, but it is not salty either.
  • Add the chicken pieces again, stir the sauce so that the ingredients are integrated and cook over low heat for 3 minutes.
  • Trick: there are also those who prefer to mix meat and fish, making for example a chicken and shrimp fideuá, so you can add the ingredients you want.
  • Pour in the water or chicken broth and let the sauce continue to cook. When it starts to boil, lower the heat.
  • Add pepper and turmeric. We mainly use turmeric to add a touch of color to the chicken fideuá, but it should be noted that the original recipe uses saffron for it.
  • When it has been boiling for 4 minutes, add the noodles and stir. If necessary, rectify with salt. Let it boil until the broth is consumed and the pasta is cooked. If the fideuá needs a little more broth, add it without problem. Likewise, if you are looking to get a broth chicken fideuá, increase the amount of broth or water.
  • Tip: follow the manufacturer’s recommendation regarding pasta cooking time.
  • In our case, the chicken and vegetable fideuá took about 10 minutes to be ready. When the pasta is ready, turn off the heat, cover the preparation with aluminum foil or newspaper and let it rest for 5 minutes.
