Chicken curry skewers with quinoa recipe

Ingredients to make Curry Chicken Skewers with Quinoa:

• 4 filleted chicken breasts

• 2 tablespoons green curry paste

• 60 milliliters of coconut cream

• 300 grams of quinoa

• 500 milliliters of water or broth to cook the quinoa

• 1 tablespoon grated ginger

• 1 bunch of chopped cilantro or parsley

• 2 spring onions chopped

• 2 tablespoons of sesame oil

• Mint leaves to decorate

How to make Quinoa Chicken Curry Skewers:

In a bowl, put the curry paste, the coconut cream and mix well. We preheat the oven to 180 degrees.

Prick the breasts with the wooden sticks for skewers (each breast on one), put them in the curry mixture and coconut cream and marinate them for about 10 minutes.

Grease a baking tray with oil and place the chicken curry skewers. Once this is done, we put the tray under the grill and roast them for 6 or 7 minutes on each side, until they are golden brown.

Put the broth or water in a saucepan with the quinoa over high heat and, when it starts to boil, reduce the heat, cover the saucepan and cook for about 15 minutes or until the broth has been absorbed and the quinoa is tender. Remove from the heat and let it rest for about 5 minutes. Remove with a fork to loosen the grains. Put the quinoa in a bowl and add the ginger, parsley, spring onion and sesame oil and mix everything well.

We distribute the quinoa on the plates, put the skewers on top and serve with mint leaves and coriander.
