Chicken Crepes Gratin Recipe

If you don’t know how to make crepes stuffed with chicken au gratin with mozzarella cheese, don’t miss out on this delicacy that includes cottage cheese or cream cheese, corn, tomato sauce and olives, among other ingredients, which help make it an even tastier filling. Absolutely delicious!

Ingredients to make Gratin Chicken Crepes:

For the mass:

• 1 egg

• 1½ cups of milk (360 milliliters)

• 1 tablespoon of margarine

• ½ cup cornstarch or cornstarch

• 1 cup of wheat flour (140 grams)

• 1 dessert spoon of salt

• ½ tablespoon Royal-type chemical yeast

For the filling:

• 500 grams of chicken breast

• 100 milliliters of chicken cooking water

• 4 tablespoons creamy cottage cheese or cream cheese (heaping tablespoons)

• 1 chopped onion

• Olive oil

• Salt

• ½ bottle of tomato sauce

• 5 tablespoons of chopped olives

• 5 tablespoons drained corn

• 1 tablespoon chives

• 1 tablespoon of paprika or sweet paprika

• 2 cloves of garlic

• ½ tablet of concentrated chicken broth

• 150 grams of grated mozzarella

• 1 pinch of ground black pepper

How to make Grilled Chicken Crepes:

Prepare the filling for the gratin chicken crepes: to do this, season the breasts with pepper, paprika and minced garlic. Mix well. Put a little oil in a pressure cooker and put it on the fire. Add the marinated chicken breasts and cook until well browned.

Trick: At this stage the chicken does not need to cook much inside, you just have to brown it on the outside.

Add the half cube of shredded concentrated chicken broth and cover the breasts with water. Cook the chicken in the pressure cooker for 10 minutes after the steam begins to come out.

If you have basic homemade chicken broth you can use it to cook the breasts instead of using the pill. After that time, remove the chicken from the pot, shred it carefully not to burn yourself and reserve 100 ml of cooking broth. Continue preparing the filling for the chicken pancakes: in another skillet over medium heat, sauté the finely chopped onion with a little oil. When the onion is browned add the shredded chicken and the rest of the ingredients for the filling (tomato sauce, cottage cheese or cream cheese, water, olives, corn and chopped chives). Let it simmer until it forms a very creamy filling for the chicken pancakes, as I show in the photo, and then turn off the heat. Season with salt if necessary.

To make the dough for the chicken crepes, beat all the ingredients (except the yeast) until you get a homogeneous dough.

Trick: You can use an electric rod or a mixer to mix them.

Finally, add the yeast and beat just to mix a little. The chicken pancake batter must be very liquid, as shown in the photo.

Tip: Be careful not to overdo the flour as this can leave the dough heavy and thick.

Spread a pan with a little margarine and let it heat up. Once it is hot, add a portion of the dough with the help of a ladle in the center of the pan and move it in a circular motion to spread the liquid well over the entire surface. As soon as the edges start to rise, flip the crepes over with a silicone spoon or spatula and wait for the other side to brown. Repeat this step until you have used up all the dough you have.

To fill the savory chicken crepes, place 2 tablespoons of the prepared filling on one of the edges and roll the crepe as if it were a cannelloni. Place all the chicken-filled crepes on a tray or ovenproof dish, cover with a little more of the filling (if you have any leftover), sprinkle the grated mozzarella on top, and bake for 10 minutes or until the cheese is melted. Melt.
