Chicken broth recipe

Ingredients to make Chicken Broth:

  • 1 chicken to boil of 1 ½ kilos
  • Salt
  • Pepper
  • 2 chopped onions
  • 2 garlic cloves, minced
  • 2 carrots peeled and chopped
  • 2 joints (leeks) cut into slices
  • 1 tablespoon dried tarragon
  • 3 celery stalks, chopped

How to make Chicken Stock:

  1. Place chicken in a large saucepan and cover with water.

2. Let it boil and remove the foam.

3. Season with salt and pepper to taste, cover and cook over low heat for 1 ½ hours.

4. Add the remaining ingredients, return to a boil and cook over low heat for a further 45 minutes.

5. Remove the chicken from the pan and slice the breasts.

6. Remove the skin, cut the meat into small cubes and put them back in the broth.

7. Rectify the seasoning and serve.

8. Save the rest of the chicken to make another dish.

9. Variants: Chicken broth with noodles.

10. Add ½ package of very broken noodles to the broth together with the diced meat and cook for another 5 minutes.

11. Pearl Barley Chicken Broth Thirty minutes before chicken is done cooking add 2/3 cup pearl barley.
