We prepare the ingredients for this vegetable sandwich with chicken. The key is that the avocado is well ripe. The bread also has to be good: I opted for a ciabatta. First, we cook the chicken breasts on the grill, with the minimum of oil. We open the ciabatta to start preparing the chicken sandwich. In both parts we will put a little salt and then a splash of extra virgin olive oil. Cut the tomato, previously washed, into slices and place it at the bottom of the bread. On top, we will make a second layer with the avocado, chopped and spread if it is ripe enough.
On the avocado we carefully place the chicken breasts, to which we will add a little salt and a little oregano. Above, we will spread mayonnaise to taste.
