Ingredients to make Chicken and Vegetable Salad:
- 1/2 kilo of chicken breast fillets cut into small thin strips
- 2 lemongrass stalks, chopped
- 2 tablespoons of fish sauce
- 1/4 kilo of broccoli cut into florets
- 1/4 liter of water
- 3 slices of fresh ginger
- 150 grams of fresh corn
- 150 grams of topped snow peas
- 125ml sweet chili sauce
- 2 tablespoons of honey
- 2 tablespoons lime juice
- 1 red pepper cut into strips
- 3 spring onions cut into strips
- 2 teaspoons lime zest
- 7 grams of fresh coriander sprigs
How to make Chicken and Vegetable Salad:
Put the water, lemongrass, ginger, and fish sauce in a pan. When boiling, reduce heat and boil for 5 minutes. Add the chicken and cook for 10 minutes. Drain and let cool; throw the liquid.
Put the oil in a saucepan and bring the broccoli, snow peas, corn, spring onion and pepper to a boil for 2 minutes. Drain, and submerge in ice water and drain again. Mix the chili sauce, lime juice, honey and zest in a bowl.
Place the vegetables and chicken in a bowl, pouring over the sauce and stir. Sprinkle the coriander leaves on top. To top the snow peas, cut off both ends and remove the strands from the sides.
