Chicken and Vegetable Pasta Salad Recipe

Athletes burn a lot of calories and need to combine both carbohydrates and proteins for optimal performance. We like fresh salads and we wanted to make a pasta salad with chicken and vegetables, perfect for sports diets.

But not only athletes can enjoy this original summer recipe. If you want to prepare a fresh dish that can be eaten anywhere (even on the beach), this pasta salad with chicken and vegetables is what you were looking for. Let’s do it!

Ingredients to make Pasta Salad with Chicken and Vegetables:

  • 2 units of chicken thigh
  • 2 units of Carrot
  • 1 unit of Avocado
  • 1 unit of Tomato
  • 300 grams of spirals
  • 3 tablespoons of olive oil
  • 2 dessert spoons of rice vinegar
  • 1 pinch of salt
  • 1 pinch of sugar
  • 1 pinch of ground black pepper

How to make Chicken and Vegetable Pasta Salad:

We gathered all the ingredients to prepare the pasta salad with chicken and vegetables. In this salad you can add the vegetables that you like the most, we have opted for fresh summer ingredients.

First, we cook the spirals (or any type of short pasta that you fancy) in plenty of boiling water with a little salt. Once boiled, drain the pasta; pass it through cold water and reserve.

Tip: The cooking time depends on the manufacturer’s instructions.

Chop the boneless chicken thighs, season with salt and pepper and fry in a pan with a tablespoon of olive oil. When the meat is ready, set it aside and let it cool down a bit before adding it to the salad. You can also use chicken breast, but it is always a little drier.

Peel the carrot and the tomato and chop them into not too small squares, as indicated in the image. Put the vegetables in a salad bowl.

Peel the avocado, remove the central bone and chop it the same size as the rest of the vegetables. Avocado is a fruit very rich in fiber and oleic acid, so do not hesitate to include it in your diet in moderation.

We prepare a dressing by mixing a couple of tablespoons of olive oil, 2 teaspoons of rice vinegar, a pinch of salt and half a teaspoon of white sugar. We booked.

If you want other types of dressings, this salad goes very well with a homemade mayonnaise.

Add the pasta and chicken to the salad, and mix well so that all the ingredients are integrated. As we have commented on other occasions, you can use another type of short pasta to make this salad.
