Chicken and vegetable paella recipe for two people

This chicken paella with vegetables for two people is very tasty! It has a very good flavor and there are also multiple varieties: there are people who add prawns or other types of shellfish to it that depends on each person’s taste. I like to make chicken paella for two people like this since I combine the vegetables with the protein that is the chicken and the starch in this case would be the rice.

Ingredients to make Paella with chicken and vegetables for two people:

  • 30 grams of rice per person (that is, 60 g)
  • 100 chicken breasts per person (or 200 g)
  • 1 medium red bell pepper
  • 1 large onion
  • 1 clove garlic
  • 1 large plain tomato
  • 1 sachet of ground saffron
  • Salt
  • Water (twice as much water as rice)
  • 1 splash of oil

How to make Chicken and Vegetable Paella for two people:

  1. In a deep frying pan we put the oil and the pepper in small pieces, stir it and leave it for 5 minutes.
  2. Add the onion, garlic and fry them.
  3. Add the liquid from the grated tomato without seeds.
  4. Once fried, add the chicken in small pieces. It has to be golden
  5. When the chicken is done, we include the rice, stir it and add the water together with the saffron, the salt and stir again a little over high heat.
  6. We wait for the rice with chicken and vegetables to boil and lower the temperature.
  7. Let it cook slowly until it no longer has water, adjust the salt if necessary and try from time to time until the rice is soft.
  8. If not add a little more water to the chicken and vegetable paella until the rice is soft.
  9. Remove from the heat when the chicken and vegetable paella for two people has no water and cover it with a cloth.
  10. In 5 minutes you can already eat.
