Ingredients to make Ravioli Stuffed with Chicken and Truffles:
- 24 units fresh pasta 6cm diameter circles
- 1 pc. hen
- 100 gr. truffle
- 100 gr. chard only the leaves
- 4 units egg
- 2 units leek
- 2 units carrot
- 2 units onion
- 2 clove garlic
- chopped chives
- Salt

- 2 units julienned carrot
- 1 glass white wine
- 100 gr. truffle juice
- 2 tablespoon flour
- chicken soup
- olive oil

How to make Ravioli Stuffed with Chicken and Truffles:
- For the filling Cook the chicken with 2 leeks, 2 carrots, 2 onions and 2 garlic cloves. Let it cook for about 50 minutes. Chop the breasts and prepare them to mix with the chopped truffle, eggs and chard. Season with salt and begin to fill. Once the ravioli is filled, we leave it in the fridge to cook at the time of serving.
- For the sauce we poach 2 onions, 2 julienned carrots with a little olive oil. Once poached, add a glass of white wine and truffle juice (100 gr.), 2 tablespoons of flour and the chicken broth.
- Finishing the dish Heat the sauce and meanwhile, cook the ravioli for 3 min. afterwards, we introduce the ravioli into the sauce and with a boil they are ready to serve. Served with chopped truffle and chopped chives.
