Ingredients to make Chicken and Shrimp Soup:
- 1 chicken breast
- 1 1/2 liters of water
- 1 tbsp. coarse salt
- 250 g of clean and fresh shrimp
- 25 ml of vegetable oil
- 1 clove garlic, minced
- 2 shallots, thinly sliced
- 1 finely chopped leek
- 1 stalk of celery finely chopped
- 1 bay leaf
- Salt and pepper to taste
- To decorate
- Lemon slices
How to make Chicken and Shrimp Soup:
- In a pot with the water and salt, bring the chicken breast to a boil together with the leek, celery and bay leaf.
- When the breast is cooked, remove it with a slotted spoon and let it cool.
- Heat the oil in a Teflon pot, when it is very hot, lower the flame and brown the garlic and shallot there, immediately add the shrimp, season with salt and pepper and fry for 2 minutes.
- Pour the broth, cover and cook over low heat until it boils.
- Chop the chicken breast and add it to the soup.
- Remove and discard the bay leaf and serve garnished with a lemon wedge.
