Ingredients to make Cream of Chicken and Leek Soup:

- 1 medium chicken breast.
- 80 grams of butter
- 450 cm3 of chicken broth
- 250 cm3 of milk cream
- 60 grams of flour
- 200 cm3 of liquid cream
- 1 chopped leek
- chopped basil
- Salt and
- pepper to taste
- Olive oil
How to make Cream of Chicken and Leek Soup:
- Place the butter, olive oil and flour in a Teflon pot or similar.
- Sauté them over moderate heat for a few minutes until the mixture is golden brown. Add the broth little by little, stirring with a wooden spoon until the mixture is homogenized, stirring constantly until the mixture boils and thickens.
- Add the milk cream, the chicken pieces.
- Cook the cream and leek over low heat for another 7 minutes, salt and pepper to taste.
- Sprinkle the soup already served on the plate with the chopped basil.
- It can be accompanied with toasted bread sautéed in olive oil and garlic.
