How to make Paella with chicken and cooked ham:

  1. Cut the chicken in pieces. Put the paellera on the fire with 3 tablespoons of oil and fry the chicken pieces over a very low heat until they are completely golden.
  2. While the chicken is cooking, crush the garlic and parsley and fry with another two tablespoons of oil, add the tomatoes (previously peeled and without seeds).
  3. After 10 minutes add the ham, the peeled shrimp peas, season with salt, stir and cook for another 10 minutes.
  4. After this time, add the ingredients to the paella, at the same time, open the steamed clams with the help of a little white wine and distribute them over the rest of the ingredients.
  5. Finally add the pepper cut into strips and the rice, bathe with the broth, in which a pinch of saffron will have dissolved.
  6. Season with salt and cook for 20 minutes, reducing the heat to medium cooking.
  7. After the time has elapsed, remove the paella pan from the heat, cover with a kitchen towel and let it rest for 5 to 10 minutes before serving. A very useful trick to prevent the rice from spoiling.
  8. When you have to wait longer than necessary before going to the table, it consists of sprinkling it with a few drops of lemon.
