Chicken and ham croquettes recipe

Ingredients to make Chicken and Ham Croquettes:

  • 500 grams of chicken thigh
  • 80 grams of Serrano ham
  • ½ unit of Onion
  • 1 unit of Egg
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 pinch of ground nutmeg
  • 300 grams of breadcrumbs
  • 300 milliliters of olive oil
  • 1 bay leaf
  • 2 dessert spoons of flour
  • 600 milliliters of milk (2½ cups)

How to make Chicken and Ham Croquettes:

We gather all the ingredients to prepare the chicken and ham croquettes. Cook the skinless chicken thigh in plenty of boiling water with a little salt and a bay leaf. Let it cook for 20-25 minutes.

You can take advantage of this easy chicken croquettes recipe to put a few vegetables in the pot and thus make a chicken broth. Meanwhile, chop the onion and fry it in a pan with a little olive oil. Once cooked, chop the chicken into very fine pieces, as indicated in the image. Add the chicken meat to the sauce and add a little salt and ground black pepper. Let the chicken cook for 4 minutes. Add the flour, move and let it cook for a couple of minutes.  Add the milk little by little, without stopping moving, until it thickens. Add a little more salt and ground nutmeg. To know when the dough is ready, keep in mind that it should not stick to the pan.  Normally, it is usually cooked for about 15-20 minutes without stopping stirring.

Tip: If the dough is very thick or very liquid, you can rectify it by adding more milk or more flour

When the dough is ready, add the chopped Serrano ham. We do not add it before so that it does not cook, since that way it could salt the dough. Let the dough cool and while we prepare the batter for the chicken and ham croquettes. To do this, beat the egg in a bowl and add a little salt. Put the breadcrumbs in another bowl.  With the help of 2 spoons, we form the croquettes and coat them, passing them first through the beaten egg and then through the breadcrumbs. We fry the chicken and ham croquettes in abundant oil that must be very hot. Let them fry until golden brown all over.
