  • 1 filleted chicken breast

  • 8 cherry tomatoes

  • 1 splash of extra virgin olive oil
  • 1 splash of lemon juice

How to make Chickpea and Chicken Salad:

1 To prepare this chickpea and chicken salad, it is preferable that you buy the cooked legumes to save time, but if not, the first step you will have to do is to cook the chickpeas in plenty of water for the necessary time according to the manufacturer’s instructions. It is preferable that you leave them to soak for a few hours with water and a bit of bicarbonate so that they soften. Once cooked, drain them and reserve them for later.

If we already have the pot of cooked chickpeas, what we will do is let them drain in a colander while we prepare the rest of the ingredients. You can take advantage of the chickpea water to make a vegan meringue, for example.

5 At the last moment, we add the sliced ​​cherry tomatoes and the chopped chives to the diet chickpea salad and sauté everything again for a couple more minutes.
