Chicken and Cheese Pasta Salad Recipe

Pasta salads can be made from almost anything, everything is good for them, but in this case we have given prominence to chicken and we have created a cold pasta salad with chicken and mayonnaise.

A quick preparation with a smooth and light flavor that everyone at home will like and that is also ideal to take with you, either to work or on a day out. The pasta salad with chicken and cheese that we present to you is delicious and once you try it you will love it.

Ingredients to make Pasta Salad with Chicken and Cheese:

  • ½ chicken breast
  • 80 grams of short pasta
  • 1 can of peas
  • 2 tablespoons of Mayonnaise
  • 1 teaspoon mustard
  • 1 pinch of salt and pepper
  • 1 lime
  • 1 pinch of Herbs de Provence
  • Feta cheese

How to make Chicken and Cheese Pasta Salad:

As in all my recipes, the first thing I recommend is to gather all the ingredients on the work table. So, start by chopping the chicken into small squares. I like to feel the chicken pieces in the salad, but if you prefer it shredded, you can skip this step.

Place the chicken in a plastic container and season with lemon juice, salt, pepper and herbs de Provence. Let the chicken marinate for a few minutes, between 10-15 will be enough.

Meanwhile, cook the pasta in the traditional way, with boiling water and a pinch of salt.  When it is ready, drain, sprinkle with a few drops of oil and reserve.

Take into account the cooking recommendations of the pasta manufacturer so that it is al dente. Remember that the portion of pasta per person is about 80-100 grams.

To cook the chicken, spread a pan with a few drops of oil and when hot, add the chicken and cook until golden brown.

If you have preferred to make this cold pasta salad with shredded chicken, you should cook the breast and when it is cold, proceed to shred it.

Pasta salads are usually served cold, so when the pasta and chicken are at room  temperature; mix everything together in a bowl adding the mayonnaise and mustard.

Correct the seasoning if necessary and add the peas to the mixture. At this point mix everything carefully to avoid breaking the peas. You can also add corn or peppers if you like.

Reserve in the fridge until serving time and accompany each dish with a little feta cheese and some bread sticks to give the dish an elegant touch. This pasta salad with chicken and cheese is ideal for a weekend day or to take to the beach or picnic.
