Ingredients to make chestnut jam:

  • 500 grams of chestnuts
  • 300 grams of sugar (1½ cups)
  • 1 tablespoon cornmeal (cornstarch)
  • 1 dessert spoon of vanilla aroma
  • 1 liter of water

How to make chestnut jam:

  1. To start with the chestnut jam recipe, first peel the chestnuts.
  2. If you have a hard time peeling them, make a cut with the help of a knife and put them in the microwave for 2 minutes.
  3. Take them out, put on some kitchen gloves so you don’t burn yourself and peel them.
  4. Take a saucepan, heat the water and sugar, add the chestnuts and the tablespoon of cornmeal, and let them cook over medium heat for 40-50 minutes, being careful not to run out of water and burn.
  5. If necessary, go adding water. Depending on the chestnuts they may need a little more cooking.
  6. When the chestnuts are cooked, they should be tender, but they are not cooked like a potato, they seem to be hard but they are not.
  7. Put them in a bowl with the syrup and grind themenough until we have a smooth cream and there are no lumps.
  8. Once they are crushed, pass the jam back to the saucepan, and add the teaspoon of vanilla aroma.
  9. Taste test, if you like it sweeter you can add a little more sugar or vanilla.
  10. You can also add a little more water to make the jam more manageable, in case it is too thick and hard. The chestnut candy is almost there!
  11. Let the chestnut jam cool, store it in jars in the fridge and it will last several days in the fridge.
  12. Tip: to make it last longer, be sure to store it in a sterilized jar.
