Cherry Tomato and Cheese Quiche Recipe

In summer and when you are on vacation, those of us who like to cook are not lazy to prepare dishes and spend a little time in the kitchen to surprise friends and family who come to visit us. Those of you who follow me know of my weakness for cold cakes and quiches, and as always in my fridge there is short crust pastry and puff pastry, because with anything we have we can prepare a vegetable quiche as delicious as this one.

On this occasion I share this recipe for cherry tomato and cheese quiche for the most exquisite palates that has black olives and anchovies, and is finger-licking good. You will see it!

Ingredients to make Quiche with cherry tomatoes and cheese:

  • 1 sheet of short crust pastry
  • 15 cherry tomatoes
  • 1 can of anchovies in oil
  • 15 pitted black olives
  • 3 eggs
  • 200 milliliters of liquid cream
  • 100 milliliters of milk
  • 100 grams of grated cheese
  • basil leaves
  • 60 grams of mozzarella cheese
  • 1 teaspoon salt
  • 1 pinch of ground black pepper

How to make Cherry Tomato and Cheese Quiche:

The first step to make this cherry tomato and cheese quiche is to preheat the oven to 180ºC.

Next, we line a cake mold with the short crust pastry, prick it with a fork and put a handful of dried vegetables on the bottom so that it does not rise. Bake for 12 to 15 minutes or until the edges begin to brown.

On the other hand, cut the olives into slices and the anchovy fillets in half. And aside, beat the eggs with the cream and milk, season with salt and pepper, add half the grated cheese and mix well. Remove the legumes from the quiche dough and spread the halved tomatoes, olives and anchovies on the bottom. Pour the egg and cream mixture over the homemade quiche and sprinkle with the remaining grated cheese. Bake the tomato and cheese quiche for 25 to 30 minutes or until the top begins to brown.

Then we wash the basil leaves and dry them well. Cut the mozzarella cheese into small pieces and distribute them over the hot cherry tomato quiche along with the basil.

Finally, we finish baking the cherry tomato and cheese quiche until it is au gratin and let it cool slightly before serving.
