Cherry and walnut cake recipe

Ingredients to make Cherry and Walnut Cake:

  1. 200 grams of flour
  2. 1 unit of Egg
  3. 125 milliliters of Buttermilk
  4. 125 grams of Sugar
  5. 70 milliliters of olive oil
  6. ½ teaspoon Yeast
  7. ½ teaspoon of bicarbonate of soda
  8. ¼ teaspoon of Salt
  9. ½ teaspoon vanilla extract
  10. 100 grams of Pitted Cherries
  11. 50 grams of Walnuts

How to make Cherry and Walnut Cake:

  • Before getting into the preparation of the cake, we preheat the oven to 180ºC. Then, we take a container with sufficient capacity and mix the egg with the buttermilk and sugar.
  • Then add the olive oil and continue mixing. Add the flour previously sifted with the baking powder little by little and without stopping mixing. Once these ingredients are integrated, add the baking soda, salt and vanilla extract.
  • Finally, we add the chopped cherries and the chopped walnuts to the cake batter. Pour the mixture into a previously greased rectangular mold and sprinkle sugar on top.
  • Bake the cherry cake for 20-30 minutes, until when inserted with a toothpick it comes out clean.
  • When done, remove the cake from the oven, unmold and let cool on a wire rack. It is important that you try to cool it on a wire rack to prevent it from getting wet.
  • And ready! We already have our buttermilk cherry cake ready to eat, accompanied by a coffee or fruit shake.
