Ingredients to make Cheesecake with curd:

  • 20 type Maria cookies
  • 65 grams of salted butter
  • 300 milliliters of cream
  • 500 grams of cream cheese (it can be Philadelphia)
  • 15 grams of curd powder
  • 100 grams of sugar (½ cup)
  • 25 milliliters of milk
  • 500 grams of strawberry jam

How to make Curd Cheesecake:

  1. Crush the cookies until they are almost powder, you can help yourself with a blender or a processor.
  2. If you do not have these utensils, use a plastic bag and a rolling pin.
  3. Melt the butter until it is liquid and add it to the crushed cookies, mix well until it forms a uniform paste.
  4. Transfer the mixture to the mold and extend it to make the base of the cheesecake, you can help yourself with a palette or do it directly with your fingers.
  5. Let it sit in the fridge to harden while you prepare the filling.
  6. Bring the cream to a simmer and gradually add the cream cheese and sugar, always stirring with a paddle or whisk.
  7. To add the curd, it is best to follow the instructions for use on its packaging.
  8. In this case, we dissolved it in 25 ml of milk and added it to the mixture while stirring for better incorporation.
  9. About 5 minutes after adding the curd, remove the mixture from the heat and let it rest for 2-3 minutes.
  10. Take the pie crust out of the fridge and pour the filling on top of the cookie crust. Let it cool.
  11. Tip: If you have bubbles when serving the filling, gently slide a spatula over the surface to remove them.
  12. Once the filling is firm enough (you can check this by moving the mold around a little or gently touching it with a paddle in the center), remove it from the fridge and put the jam on top.
  13. Let refrigerate for another 15 or 20 minutes and your curd cheesecake will be ready to remove from the mold and serve. Enjoy!
