Tomato and basil are two products that fit perfectly, and if we add goat cheese to them, the result is a truly spectacular appetizer. I have served them on toasted bread to prepare a simple, quick and complete canapé at the same time. If you have guests and you don’t know what to prepare to serve as a starter, this is undoubtedly an option that can get you out of trouble. Keep reading and discover the steps to follow to make these tomato, basil and goat cheese toasts.
Ingredients to make Tostadas with cheese, tomato and basil:
- 1 loaf of rustic bread or baguette
- 3 fresh tomatoes
- 1 handful of fresh basil leaves
- 4 cloves of garlic
- 1 tablespoon of Vinegar of Modena
- 2 tablespoons of olive oil
- 1 roll of goat cheese
- 1 pinch of black pepper
- 1 pinch of salt (optional)
How to make Cheese, Tomato and Basil Tostadas:
To prepare this easy appetizer, the first thing you should do is gather all the ingredients. Next, wash the tomatoes, cut them into quarters and remove the seeds. Then, finely chop each tomato quarter, as shown in the photograph. Take a bowl, put the chopped tomatoes in it, and add the basil leaves cut into strips, the balsamic vinegar, and olive oil, half of the peeled and crushed garlic, salt and pepper to taste. Mix and let marinate in the refrigerator for an hour, stirring occasionally.
Tip: The longer the mixture spends macerating, the more intense the flavor will be.
After the resting time, and to continue with the preparation of the toast with tomato and basil, cut the bread into slices of the size you want and toast them in a toaster or frying pan. Then rub each toasted bread with the remaining garlic and drizzle with a little olive oil. Place one or two slices of goat cheese on each toast and, on top of them, a little of the tomato and basil mixture. Then, bake the toasts with the oven preheated to 200ºC, for 10-15 minutes, or until the cheese has melted and the tomatoes have lightly toasted.
Finally, serve the cheese, tomato and basil toasties still warm as an appetizer, starter or even a main course accompanied by mashed potatoes, for example, or roast potatoes. Bon Appetite!
