- 10 jalapeno peppers
- 300 grams of cheese of your choice cut into strips
- 3 tomatoes
- 1 cup of water (240 milliliters)
- ½ cup chicken broth
- 1 sprig of epazote
- 1 cup onion
- 1 clove garlic
- 2 eggs
- ½ cup of wheat flour (70 grams)
- ½ cup of oil
- 1 pinch of salt and pepper to taste
How to make Jalapeno Peppers Stuffed with Cheese:
To make this stuffed jalapeños recipe, first roast the chiles directly over the heat so you can remove the skin. Turn them over regularly so that they cook very well on all sides and, when they have changed their texture and hue, store them in a plastic bag so that they sweat and it is much easier to clean them.
While the chiles rest, blend the tomatoes with the piece of onion, the clove of garlic and a cup of water.
Heat a tablespoon of oil in a pot, strain the tomato sauce, add the half cup of chicken broth, season with salt and pepper to taste and let it cook for 5 minutes. When it starts to boil, add a sprig of epazote and let it cook for 5 more minutes.
