Cheese Onion Soup Recipe

Ingredients to make Cheese Onion Soup:

  • 6 units of sweet onion
  • 60 grams of butter
  • 10 slices of bread
  • 2 liters of meat broth
  • 3 tablespoons of flour
  • 150 grams of grated cheese
  • 2 tablespoons of oil
  • 1 pinch of sugar
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make Cheesy Onion Soup:

1.We prepare the ingredients for the onion soup with cheese. Choose sweet onions. The bread is of the ciabatta type, while the cheese is a special grated mixture for gratin.

2.In a large saucepan, heat the oil and then melt the butter. It is a very important base for this cheese and onion soup originally from France.

3.Add the peeled and julienned onions and season with salt and pepper. The salt will make the onions soften quickly

4.Cook the onion over a very low heat for about 20 minutes. We want it to be transparent and soft, without it taking on a golden color. We also add a pinch of sugar, in case the onions are not very sweet.

5.Now add the flour, stir for a minute and then pour in the meat broth, which we will bring to a boil by raising the heat a little. Once it boils, lower the flame again and let the onion soup cook for about 20 minutes over low heat, stirring constantly.

6.Finally, we chop the bread and add it to the pot, as well as the grated cheese and a little more salt and pepper. If we want the onion soup au gratin, we pour it into individual bowls that we bake at 220ºC with the grill for five minutes.

7.We serve the onion soup with cheese piping hot, accompanied by red wine. Another variant of this recipe is the onion soup au gratin with egg. Bon Appetite!
