Cheese Lollipops Recipe

Every February 14 we celebrate Valentine’s Day in commemoration of the death of the priest Valentine, who overcame Emperor Claudius II’s measure of prohibiting the marriage of soldiers back in the 3rd century, marrying them in secret. That is why we also know this date as “Valentine”. For this reason, we believe that cooking for others is a beautiful gesture of love, and we want to teach you how to make these heart-shaped cheese lollipops, ideal for an original appetizer before a delicious Valentine’s dinner with your special someone.

Ingredients to make Cheese Lollipops:

  • 30 grams of hard cheese
  • ½ teaspoon of turmeric
  • ½ teaspoon oregano
  • ¼ teaspoon ground chili
  • 3 pieces of brochettes or 6 toothpicks

How to make Cheese Lollipops:

  1. To start this crispy cheese lollipop recipe, first grate the hard cheese using a fine grater. We point out that you can use Parmesan, Sardinian or Reggianito cheese.
  2.  If you wish, you can also use half the amount of hard cheese and half of a semi-hard cheese, such as provolone, mental, goat cheese or Gruyere.
  3. Next, mix the cheese or cheeses that you have grated with the seasonings, you can also adapt it to your taste.
  4. Tip: You can also add seeds or chopped nuts, cold cuts such as Serrano ham or other dry condiments, such as rosemary, thyme, tarragon or dried basil and even chopped olives.
  5. On the other hand, prepare a pan covered with parchment paper.
  6. Trick: so that it does not rise, you can secure the paper in the pan by previously anointing it with oil.
  7. Soak brochette sticks or toothpicks in water. This way, they won’t burn when cooking your lollipops in the oven.
  8. Support a heart-shaped cutter on the parchment paper and fill it with cheese forming a thin layer. Remove it carefully so as not to disassemble the figure.
  9. Place the stick that you have previously soaked and cover it with more cheese to make sure it sticks well to your heart-shaped cheese lollipop.
  10.  Tip: if you use brochette sticks, cut them in the middle.
  11. When you have all the lollipops ready, cook them in the hot oven for 5 minutes or until they are just golden. Let them cool on the paper and peel them off being careful not to break them.
  12. Tip: they shouldn’t stick together, but if they do, help you with a knife, rubbing it flush with the paper and handling it very carefully so as not to break them, as they are somewhat fragile.
  13. To present them, place them in a glass or shot with coarse salt at the bottom. In addition, you can make some small labels by cutting a rectangle, folding them and writing “happy day”, “I love you”, “cheese lollipops”, “Bon Appetite” or whatever you like.
