Ingredients to make Cheese and Onion Empanadas:
• Dough Empanadas
• 150 grams of mozzarella cheese
• 150 grams of ricotta cheese
• 1 unit of large red onion
• 2 units of Eggs
• 1 glass of red wine
• 1 teaspoon of butter
• 2 bay leaves
• 2 sprigs of thyme
• 1 pinch of sugar
• 1 pinch of salt
• 1 pinch of black pepper
How to make Cheese and Onion Empanadas:
Our first step to make homemade empanadas is to pre-list the ingredients. In a deep pot with enough water, add the eggs and cook until they are hard. Remove from heat.
Tip: Add a little vinegar to the water to make it much easier to peel them.
To prepare the onion, melt a little butter and fry the cebolada cut into feathers in it. Add salt, black pepper and garlic paste to taste. Sauté for a few more minutes. When the onion is caramelizing, add the red wine with the bay leaf and thyme. Lower the heat to a minimum and keep to help the caramelization process and add a pinch of sugar. Once you notice that the liquid from the onions turns into syrup, turn off the heat and let cool.
In a separate bowl, mix the caramelized onion with the boiled eggs, previously grated. Mix the ingredients for the filling of the cheese empanadas well. Add the mozzarella cheese and grated ricotta cheese. Mix the ingredients well.
The ideal is that the ingredients are distributed evenly as seen in the photograph. Add salt and pepper if you consider necessary, remember that it is important that you try all the recipes and if you want to add one more ingredient, it is totally valid. Prepare the empanadas lids. Stretch the dough and cut discs with the help of a pastry cutter, a glass or a bowl.
If you have the mold that helps you make the empanadas, use it, and otherwise remember that you can make homemade empanadas in a traditional way, skipping this step. Add a portion of filling in the center of the disk of dough. Use a small spoon to check the measurements. Close the empanadas and reserve them on a plate covering with a kitchen cloth. Take our empanadas to a baking sheet. If you wish, you can fry them in very hot oil, but in order not to add more calories, it is better to bake them.
Separately, beat an egg to paint the empanadas. With the help of a kitchen brush, bathe the empanadas with the beaten egg. In this way the homemade empanadas will have shine.
