Cheeks in Sauce Recipe

Ingredients to make Carrillada in sauce:

  1. 4 pork or beef cheeks
  2. 6 garlic cloves
  3. 200 grams of onion
  4. 100 grams of carrot
  5. 400 milliliters of red wine
  6. 400 milliliters of water
  7. 1 bouquet of herbs (bay leaf, thyme and oregano)
  8. 1 cube of meat broth
  9. 2 tablespoons of flour to coat
  10. 1 splash of olive oil
  11. 1 pinch of salt
  12. 1 pinch of ground black pepper

How to make Carrillada in sauce:

  • Season the cheeks with salt and pepper on both sides and pass them in flour. Cut all the vegetables into pieces or slices and set them aside

  • Seal the cheeks in a pan with a jet of hot olive oil. When they are golden on the outside, remove them and reserve them.
  • Trick: Sealing the meat means cooking it on the outside but not on the inside, so it will be juicier later.
  • Add all the cut vegetables and the whole garlic to the pan, stir and integrate all the ingredients. You can chop the vegetables to your liking, into more or less small pieces, since the cheeks in sauce will be equally delicious.
  • Once the vegetables are poached, pour in the red wine and when the alcohol evaporates a bit, add the cheeks again. At this point, add the herbs and the shredded meat cube to enhance the flavor of the sauce.
  • Pour the water and cook the cheeks in the sauce over very low heat, with the pan or casserole covered, for approximately 1 hour and a half. Remember that the veal cheeks will take a little longer. When the meat is tender, remove it, remove the garlic and herbs, blend the sauce and strain it to make it finer.
  • Tip: The cooking time of the cheeks in sauce can vary depending on the size, so watch the preparation.
