Ingredients to make Chard Tamales:

• 1 teaspoon baking powder

• 1 teaspoon salt

• 125 grams of butter

• 500 grams of flour for tamales

• 1½ cups chicken broth

• 1 bunch of Swiss chard leaves

• Corn husks for tamales

• Manchego cheese or aged cheese to taste

How to make chard tamales:

Start the chard tamales recipe by cleaning and soaking the corn husks in warm water so that they are easy to handle when wrapping the tamales.

In a large enough container, begin to beat the butter until white. We advise you to use an electric mixer, or if you prefer you can do it manually. Once it is whitened, add the tablespoon of salt and the teaspoon of baking powder. Baking powder will make it fluffier.

Next, add little by little the flour for tamales. Next, pour the chicken broth and mix all the ingredients very well until everything is integrated. If you see fit, add more chicken broth until you achieve a smooth, moist dough texture. Clean the chard leaves and remove the stem and then chop them into a small size. Then, add them to the container where you prepared the dough and mix again.

With the corn husks clean and softened, it is the ideal time to prepare the tama l. First, place a large spoonful of tamale dough on the sheet and spread it out gently. Then add the cheese in the center, roll up the tamale and close it, continue this process until you finish with all the dough. With the amounts mentioned you can make about 15 to 20 large tamales. Arrange the tamales in a steamer pot. Next, place a bed of leaves for the tamales and place them vertically one by one, cover and cook over medium-low heat for an hour. If you don’t have a steamer, you can make the tamales in a pot over a bain-marie. You must make sure that the tamales do not touch the water at any time.

After the cooking time, let it cool slightly and ready, you can now enjoy some delicious chard tamales.
