Chard stew recipe, potatoes, white beans and rice

Ingredients to make Potage of chard, potatoes, white beans and rice:

  • For 4 people:
  • 100 grams of rice
  • 300 grams of white beans
  • 1 onion
  • 1 green bell pepper 2 cloves of garlic
  • 1 bunch of Swiss chard
  • 1 glass of olive oil of 0.4º
  • 1 teaspoon sweet paprika
  • Salt

How to make chard stew, potatoes, white beans and rice:

  1. We put the white beans to soak the night before with twice as much cold water as their volume.
  2. The next day we drain them and put them in a saucepan with the soaking water.
  3. Let them cook for half an hour, drain them and change the water.
  4. Put in the pan, together with the beans covered in clean, cold water, the green pepper and the onion cut into brunoises (small squares) and the finely chopped garlic cloves.
  5. Let cook until the beans are tender.
  6. Prepare the chard, remove the leaves, clean them under running water and chop the leaves.
  7. We reserve the chard stalks to cook and coat them and accompany them as a garnish for another dish.
  8. Add the rice and chard leaves to the beans and cook until the rice is cooked, about 20 minutes.
  9. Season with salt and a little paprika.
