Chard Stew Recipe
Chard stew is a very traditional dish from the Mercian countryside. A vegetarian version and another with black pudding can be prepared, as well as chickpeas can be added. Ingredients to make chard stew:
- 400 jars of white beans
- 1 green bell pepper (medium)
- 1 red bell pepper
- 2 cloves of garlic
- 1 dessert spoon of paprika from la Vera, cumin and Nora
- 1 pinch of pepper
- 3 pinches of salt or Malden salt (optional)
- 1 ripe tomato
- 2 pieces of blood sausage (optional)
- 4 sprigs of Swiss chard
- 1 splash of extra virgin olive oil
- 2 glasses of water with a dash of vinegar
- 1 bay leaf
How to make chard stew:
Wash the chard leaves under the tap so that they are clean of impurities. Leave them in a drainer.
Cut the peppers, onion and garlic into medium pieces. Sauté everything for at least 4 minutes while stirring.
Prepare a small cup with all the spices together so that they mix with each other. Cut the tomato into cubes of a finger of grazer and add it to the sauce along with the spices. Stir and let it cook for 3 minutes.
After the time, add the water with vinegar to the pot and let it boil for 2 minutes.
Now add the white beans and then cut the chard an inch wide and remove their ends. Add the chard leaves to the pot along with the rest of the ingredients. You will think that they will not fit, but then they are nothing.
Tip: In this step you can also add the chickpeas if you want to add them.
Continue cooking and add the salt flakes to the point, add the black pudding if you like. Stir carefully, cover the pressure cooker and let it cook for 25 minutes.
