Ingredients to make Swiss Chard Extremadura:

  1.  1 kilogram of Swiss chard
  2.  3 potatoes
  3.  1 onion
  4.  2 cloves of garlic
  5.  3 eggs
  6.  1 splash of oil
  7.  1 pinch of salt

How to make Swiss Chard Extremadura:

  • Wash the chard under the tap to remove all the dirt and cut them into pieces. Put a pan with water and salt, add the chard and let them cook until they are tender, for approximately 10 minutes, depending on the thickness of the chard. Remove the chard and let the water drain well. Reserve them.
  • If you prefer, you can steam the chard.
  • Separately, peel the potatoes, wash them and cut them into small pieces as if they were to make a potato omelette. Put a pan with abundant olive oil and fry the potatoes when the oil is very hot. When they are fried, take them out and reserve them.
  • Peel the onion and cut it julienne or into strips. Then, in the same pan that you used to cook the potatoes, remove a little oil and cook the onion until it is poached.
  • When the onion is poached, put the potatoes on top so that they cover the entire base of the pan. Keep the heat low and add a little salt.
  • On top of the potatoes, add the chard and spread them over the entire base. At this point, you can add a teaspoon of sweet or hot paprika if you want the Extremadura-style chard to have that point of flavour.
  • Beat the eggs on a plate, add a little salt, pour the eggs over the chard and stir so that they are integrated throughout. Cook the chard Extremadura style with eggs and let them curdle.
  • The point of the curdled eggs will be the one you like, so if you like them rare, take the pan off the heat right away and with the same heat of the ingredients they will finish cooking.
  • When the Extremadura-style chard is ready, serve it immediately to enjoy this hot dish.
