Chaque de Tripas Recipe

Ingredients to make Chaque de Tripas:

  • For 4 people:
  • Two liters of water
  • Half a kilo of beef
  • Half a kilo of lamb loin
  • Half a kilo of fresh lamb casings
  • 250 grams of pork rinds
  • six potatoes
  • Half an onion
  • Two tablespoons of pataca corn
  • Three ground red peppers with garlic
  • 100 grams of green beans
  • One roasted yellow bell pepper
  • Salt
  • oregano
  • and cumin

How to make Chaque de Guts:

1.Wash the meat and intestines well.

2.Then prepare a broth with them to which you can add the ingredients of a common broth.

3.Once the broth is well cooked, strain it.

4.Prepare the dressing as follows; in a pot with a little water, cook the red pepper with the half head of chopped onion.

5.Once the dressing is ready, add a little oil and the strained broth, the meat cut into pieces, the tripe cut into rings, the crushed potatoes, the chuños, the peeled broad beans, the chopped corn cobs and the yellow pepper. .

6.Let it cook well, until you see that the meat becomes tender; when it is ready, serve it accompanied by toasted corn.
