Celery, Onion and Leek Soup Recipe

Our friend has shared with us this super low-calorie celery, onion and leek soup, since all the ingredients contain very few calories, and therefore it is ideal for detoxifying our body and as a purifying broth to lose weight. Try it inside the toasted village bread that we are going to use as containers and decorated with a few pieces of celery and apple… and you will see that it will never leave you wrong!

Ingredients to make Celery, Onion and Leek Soup:

  • 1 bunch of white celery
  • 3 large potatoes
  • 2 pieces of leek
  • 1 large onion
  • 2 pounds of water
  • 30 milliliters of extra virgin olive oil
  • 1 red apple
  • 4 small village breads about 10 or 12 centimeters in diameter with a hard crust
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Celery, Onion and Leek Soup:

  1. With the potatoes, peeled and cut into cubes, and the green leek leaves, we make a broth by cooking them in the two liters of water for approximately 40 minutes, until the potatoes are soft.
  2. While the broth is being made, cut the celery into pieces (reserving a twig for the final decoration of the purifying broth), and julienne the leek and onion, and poach them all together in a frying pan with a little oil over medium heat/ low for about 20 minutes minimum.
  3. When the potatoes are ready, remove the green leaves of the leek with a slotted spoon, add the poached vegetables to the pot and let it boil for another 5 minutes.
  4. Tip: If necessary you can add more water to the celery and onion soup. We always make sure that too much has not evaporated.
  5. Pour the depurative broth of celery, onion and leek into a blender or blend it all with a blender until you get a smooth cream. Add a pinch of salt and pepper to taste and mix again. Strain through a Chinese or fine metal strainer so that the celery and leek cream does not have lumps since these vegetables are very fibrous.
  6. Before serving the celery and leek soup to lose weight, we heat the village breads in the oven without letting them brown and then we make a circular groove on the top as a lid. Then we empty all the crumb inside and we will have a kind of container to place the celery broth to lose weight.
  7. Let’s pour the celery, onion and leek soup into the buns, cut the apple and the celery stick that we had stored into very small pieces and we can now serve this extraordinary cream with the toasted bread.
