Cauliflower soup with rice is a healthy dish, ideal for dinner or as a starter at lunch. The cauliflower and rice mixture has many vitamins and is a very comforting hot broth for the cold months.
Ingredients to make Cauliflower Rice Soup:
- 1 unit of Carrot
- ½ unit of Leek
- 1 clove garlic
- 40 grams of Rice
- 150 grams of cauliflower
- 1 pinch of salt
- 1 pinch of ground black pepper
- 1 bay leaf
- 600 milliliters of Water (2½ cups)
- 3 tablespoons of olive oil
How to make Cauliflower Rice Soup:
- We gather all the ingredients to make the cauliflower soup with rice.
- Sauté the sliced leek in 2 tablespoons of olive oil and add the whole peeled garlic. Let cook for 2 minutes.
- Add the carrot peeled and also cut into slices. Let cook for 3 minutes and add a little salt and ground black pepper.
- Add the cauliflower washed and cut into small trees. Stir well and let cook for a couple of minutes.
- Add the water and the bay leaf, adjust the salt and bring to a boil. The water can be replaced with vegetable broth.
- When the cauliflower soup starts to boil, add the rice and let it boil until the rice is tender (about 15 minutes). When serving, do not forget to remove the garlic clove and the bay leaf.
