Cauliflower recipe in white sauce

Cauliflower is one of those foods that mothers/fathers and grandmothers always prepare, although sometimes their daughters and sons tend to reject it. It is low in calories and has a high nutritional content, so learning to cook it in such a way that the little ones want to eat it is a challenge and an obligation. Well, this time I have decided to make a tasty and very easy vegetarian recipe, so that everyone at home can enjoy the benefits of cauliflower. It is a recipe for cauliflower in sauce, do you dare to try it?

Ingredients to make Cauliflower in white sauce:

  •  1 cauliflower
  •  3 tablespoons of olive oil
  •  1 pinch of salt
  •  1 pinch of pepper
  •  ½ cup panko (or breadcrumbs)
  •  ½ dessert spoon of paprika (ground paprika)

For the white sauce

  •  1½ tablespoons avocado butter
  •  1 tablespoon of wheat flour
  •  1 cup of coconut milk
  •  1 teaspoon of nutmeg
  •  ½ tablespoon nutritional yeast
  •  1 pinch of salt
  •  1 pinch of pepper

How to make Cauliflower in white sauce:

The first thing you should do to start preparing the recipe for cauliflower in sauce is to separate it into small trees. Then mix them with the oil, place them on a baking tray, sprinkle salt and pepper to taste and bake at 200ºC for 15 minutes, or until lightly golden. If you prefer, you can also steam or boil the cauliflower.

Trick: If you make the cauliflower in the oven, it is not necessary to boil it in water beforehand.

While the cauliflower is cooking, take the opportunity to prepare the homemade white sauce. To do this, heat the avocado butter in a pan and add the flour, stirring constantly for 2-3 minutes over medium heat. Instead of this butter you can use cornstarch.

Next, pour in the coconut milk, which should be at room temperature, and continue mixing for another 3 minutes. Then add the spices and nutritional yeast, mix and remove the sauce from the heat so that it thickens a little when it cools.

When the cauliflower is ready, place it in a container suitable for the oven, distribute the white sauce over all the little trees and reserve a moment.

For the cauliflower in white sauce to acquire a crispy texture, mix the panko with the paprika and add salt and pepper to taste. Remember that you can substitute panko for regular breadcrumbs. Likewise, it is possible to sprinkle grated cheese instead of this preparation, although I have opted for this batter to make a vegan recipe.

Sprinkle the previous mixture over the cauliflower with the white sauce and bake at 190ºC for 25 minutes, or until the cauliflower is well done and crispy.
