Cauliflower pancakes are very tasty and easy to prepare, as well as being rich in fiber and vitamins. If you are trying to introduce more vegetables into your diet, or want the children in the house to try them more often, these pancakes are perfect to achieve it!

Ingredients to make Cauliflower Pancakes:

  •  500 grams of cauliflower
  •  1 egg
  •  1 clove of garlic
  •  1 handful of parsley
  •  150 grams of flour
  •  1 pinch of salt
  •  1 pinch of pepper
  •  1 splash of olive oil

How to make Cauliflower Pancakes:

Cut the florets of cauliflower and wash it. Put it in a bowl and put it in the microwave, cook it for 8-10 minutes at maximum power. Take it out to see if it is tender, if it is not, just leave it for a few more minutes. If you wish, you can also cook them in water or steam them.

With the help of a fork, mash the cauliflower well. Add an egg, 1-2 minced garlic, parsley, pepper and a little salt. Mix all the ingredients. Little by little, add the flour to the mixture of the cauliflower pancakes. Go mixing the flour until there is a tender dough but that you can handle.

With a spoon take a little of the dough and flatten it. If necessary, sprinkle with flour so it doesn’t stick.

Put a frying pan with a little oil, add the pancakes and brown them on both sides. Repeat the process until all the cauliflower pancakes are done. Serve them and enjoy!
