Cauliflower Cream Recipe

Ingredients to make Cauliflower Cream:

  • 1 cauliflower or about 400 grams of cauliflower florets
  • 4 cups of water
  • 2 tablespoons of salt
  • 1 piece of stale bread, 2 or 3 days old
  • 3 tablespoons of butter
  • 1 cup of chopped onion
  • 2 garlic cloves, minced
  • 1/4 cup of the white part of chives, minced
  • 1/8 teaspoon ground white pepper
  • 1/16 teaspoon grated nutmeg
  • 4 cups of chicken broth
  • 5 drops of hot sauce
  • 3/4 of cup of whipping cream

How to make Cream of Cauliflower:

1.Cauliflower leaves are removed. Flowers are separated and cleaned. They are washed by shaking them well under running water. They slip away

2.In a pot, put the water, the salt and the piece of bread on the fire. It is brought to a boil. Cauliflower is added.

3.Bring to a boil again and cook for about 5 minutes. Remove from heat, remove bread and drain. Cauliflower is set aside.

4.In a saucepan, melt the butter. Add the onion, garlic, chives, pepper and nutmeg. Cook until wilted, about 4 minutes.

5.Add the cauliflower and cook for about 3 minutes. Consommé is added. Bring to a boil and cook for about 5 more minutes.

6.Everything goes to the glass of a crusher. It is crushed, strained and returned to the clean pot. It is brought to a boil.

7.Spicy sauce is added. Stir the cream, cook for 1 or 2 minutes, and remove from heat to serve immediately.
