Cauliflower and Pumpkin Soup Recipe

Ingredients to make Pumpkin Cauliflower Soup:

  • ½ unit of Cauliflower
  • 400 grams of Pumpkin
  • 1 unit of Leek
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 jet of olive oil
  • 500 milliliters of water

How to make Pumpkin Cauliflower Soup:

  1. To prepare the cauliflower and pumpkin soup, we gather all the ingredients.
  2. In a pot, cook the cauliflower with plenty of boiling water and a pinch of salt. Let cook for 8 minutes. It does not have to be completely tender (later we will boil it with the rest of the ingredients).
  3. In another pot, fry the leek and pumpkin. We can chop them as we want since later we will cook and beat them. We add a little salt.
  4. Drain the cauliflower and add it to the pot with the leek and pumpkin. Remove, cook for 2 minutes and add water to cover. We rectify salt if necessary. Let the cauliflower and pumpkin soup cook for approximately 15 minutes.
  5. We beat the cauliflower and pumpkin soup with the blender and add salt and pepper to our liking.
