Ingredients to make Pumpkin Cauliflower Soup:
- ½ unit of Cauliflower
- 400 grams of Pumpkin
- 1 unit of Leek
- 1 pinch of salt
- 1 pinch of ground black pepper
- 1 jet of olive oil
- 500 milliliters of water
How to make Pumpkin Cauliflower Soup:
- To prepare the cauliflower and pumpkin soup, we gather all the ingredients.
- In a pot, cook the cauliflower with plenty of boiling water and a pinch of salt. Let cook for 8 minutes. It does not have to be completely tender (later we will boil it with the rest of the ingredients).
- In another pot, fry the leek and pumpkin. We can chop them as we want since later we will cook and beat them. We add a little salt.
- Drain the cauliflower and add it to the pot with the leek and pumpkin. Remove, cook for 2 minutes and add water to cover. We rectify salt if necessary. Let the cauliflower and pumpkin soup cook for approximately 15 minutes.
- We beat the cauliflower and pumpkin soup with the blender and add salt and pepper to our liking.
