Cauliflower Al Pastor Tacos Recipe

• 1 cauliflower, cooked

• 2 tablespoons of achiote

• ½ cup of orange juice

• 2 tablespoons of vinegar

• 1 clean guajillo chili

• 1 tomato

• 1 clove garlic

• 1 clove

• 1 pinch of salt and pepper to taste

• 1 piece of red onion chopped

• 1 teaspoon of oil

• Corn tortillas

• Chopped cilantro

• Roasted pineapple chunks

• Sauce to taste

How to make Cauliflower Al Pastor Tacos:

To make the cauliflower al pastor tacos recipe, in a container add the orange juice, the vinegar and the achiote. Mix so that the achiote dissolves a little and reserve.

In a Comal or frying pan, roast the tomato, the garlic clove and the clean guajillo chili. Turn these ingredients over to char (roast) them on all sides. The guajillo chili does not require much time, so a couple of minutes will suffice. When the tomato and the garlic clove are already roasted, transfer them to the blender with the guajillo chili, the mixture of orange juice and achiote, salt, pepper to taste and a clove. Blend everything for about 3 minutes and reserve. In a pot with a little oil, sauté the purple onion until lightly browned. Then add the cooked cauliflower and stir constantly for about 3 minutes.
