Castilian Soup with Egg recipe

Garlic soup is a classic of Spanish cuisine. It may have its origin in times of famine where broths were made with leftovers and food that was at home. Garlic is, without a doubt, one of the most characteristic foods in Spanish cuisine. In addition, it has many beneficial properties for our body, such as cold prevention.

Spanish Castilian soup has basic ingredients such as garlic, bread, ham and parsley. On this occasion, we have added the boiled egg to the soup itself and it is a real delight. Do not move that we tell you how to prepare Castilian soup with egg. We hope you love it as much as we do!

Ingredients to make Castilian soup with egg:

  • 4 cloves of garlic
  • 3 slices of bread
  • 120 grams of Serrano ham
  • 1 handful of parsley
  • 1 pinch of sweet paprika
  • 1 piece of Leek
  • 1 pinch of salt
  • 1 unit of Egg
  • 600 milliliters of Water (2½ cups)

How to make Castilian soup with egg:

  1. We gather all the ingredients to prepare the Castilian soup with egg.
  2. Peel and fillet 3 cloves of garlic, and fry them in a pot together with the leek cut into circles. Let them brown for 3 minutes. Reserve a clove of garlic for later.
  3. Add the bread cut into small squares and let it toast.
  4. Tip: Bread from previous days is perfect for this soup.
  5. Add the diced Serrano ham, stir and let it cook for a couple of minutes.
  6. Add water to cover and let the Castilian soup boil for 6-8 minutes. Add a pinch of salt if necessary. When it starts to boil, season with a pinch of sweet paprika.
  7. In a mortar add the garlic that we have set aside together with the washed parsley. Crush well, if necessary add a little olive oil to facilitate this step.
  8. Crack the egg and add it to the Castilian soup, let it cook without moving it for 10 minutes.
  9. Add the garlic and parsley paste and cook for another 5 minutes.
