Castilian Potage Recipe
Ingredients to make Castilian Potage:
- ½ kg of chickpeas
- ½ kg of spinach
- 2 carrots
- 2 bay leaves
- 4 garlic cloves
- 1 onion
- 2 boiled eggs
- 1 tablespoon of flour
- 1 tablespoon paprika
- olive oil
- Salt
How to make Castilian Potage:
Put the chickpeas to soak, with a bay leaf, the night before.
Chop the carrots, half an onion and the spinach.
Cook the chickpeas, the chopped vegetables and the bay leaf in hot water. Leave on low heat for a couple of hours.
You can also make them in the pressure cooker, reducing the cooking time.
Separately, make a sauce with the other half chopped onion and chopped garlic.
When it is almost sautéed, add the flour, the paprika and a ladle of the chickpea broth.
Add it to the chickpeas and cook another 5 minutes.
Serve with chopped egg.
