Cassava flour cookies recipe

Ingredients to make cassava flour cookies:

  1. 170 grams of fine cassava flour
  2. 100 grams of sugar (½ cup)
  3. 4 tablespoons grated coconut
  4. 1 tablespoon softened butter
  5. 2 units of eggs
  6. 1 teaspoon of soluble coffee or cinnamon (optional)
  7. 1 pinch of salt

How to make cassava flour cookies:

  • Gather the necessary ingredients to prepare these gluten-free cassava flour cookies.
  • Beat the eggs with the sugar until the mixture is foamy. Add the softened butter and mix again.
  • Add the other ingredients of the cassava starch cookies and mix everything. To give a touch of different flavor, you can add instant coffee or cinnamon as I have done.
  • This should be the appearance of the dough after mixing well. Let stand 10 minutes in the refrigerator.
  • Take portions of dough and form small balls. Place them on a silicone mat or greased baking tray with parchment paper or parchment paper and flatten them slightly. Bake the cassava cookies without flour for about 20 minutes at 180ºC or until they are well golden.
  • Tip: It is preferable that you preheat the oven a few minutes before cooking the cookies.
