Ingredients to make carrot oquis:
- 1/2 k.(1lb) peeled carrot
- 2 tablespoons finely chopped onion
- 6 tablespoons of butter
- 1/2 cup grated Parmesan cheese
- 6 tablespoons of flour
- 2 egg yolks
- finely chopped parsley
- nutmeg
- salted
- Pepper
How to make carrot oquis:
- Cook the carrots, remove and cut them into slices.
- Melt 2 tablespoons of butter in the pan and add the onion, sauté and add the carrot, cooking for another 5 minutes.
- Then process until it forms a puree and let cool.
- Add the rest of the ingredients and mix.
- Separately boil water with 1 tablespoon of salt and using 2 tablespoons, form the gnocchi into croquettes and add 5 by 5 to the boiling water, when they rise to the surface, remove, drain and transfer them to a container with ice water to cut the cooking.
- Butter a fountain and place a layer of gnocchi sprinkling Parmesan cheese and bits of butter.
- Bake in a preheated oven at 400°F or 200°C for 10 minutes.
- Serve sprinkled with Parmesan cheese and chopped parsley.
- Serve immediately.
