Carrot Oquis Recipe

Ingredients to make carrot oquis:

  1. 1/2 k.(1lb) peeled carrot
  2. 2 tablespoons finely chopped onion
  3. 6 tablespoons of butter
  4. 1/2 cup grated Parmesan cheese
  5. 6 tablespoons of flour
  6. 2 egg yolks
  7. finely chopped parsley
  8. nutmeg
  9. salted
  10. Pepper

How to make carrot oquis:

  • Cook the carrots, remove and cut them into slices.
  • Melt 2 tablespoons of butter in the pan and add the onion, sauté and add the carrot, cooking for another 5 minutes.
  • Then process until it forms a puree and let cool.
  • Add the rest of the ingredients and mix.
  • Separately boil water with 1 tablespoon of salt and using 2 tablespoons, form the gnocchi into croquettes and add 5 by 5 to the boiling water, when they rise to the surface, remove, drain and transfer them to a container with ice water to cut the cooking.
  • Butter a fountain and place a layer of gnocchi sprinkling Parmesan cheese and bits of butter.
  • Bake in a preheated oven at 400°F or 200°C for 10 minutes.
  • Serve sprinkled with Parmesan cheese and chopped parsley.
  • Serve immediately.
