Jelly is one of those desserts that can be eaten year-round and never goes bad, especially in the hot summer months. It can be made in so many flavors and shapes that there will always be options for everyone and, above all, for the little ones in the house.

In this article, we are going to prepare a dessert that will be a great ally on days when we eat copiously, it is a healthy, light and balanced carrot jelly recipe. This preparation is recommended for vegans, vegetarians and athletes, as it provides a rich sweet without adding too many calories to the diet. Stay with us and learn how to make carrot jelly for everyone at home!

Ingredients to make Carrot Jelly:

  • 4 carrots
  • 2 glasses of orange juice
  • Zest of half an orange
  • 1 pinch of ginger
  • 1 cup of honey
  • 1 glass of water
  • 1 envelope of agar-agar or 4 sheets of neutral gelatin

How to make Carrot Jelly:

  1. Grate the skin of half an orange, but only on the orange part so that it does not leave a bitter taste. Peel the carrots, cut the ends and grate them.
  2.  Leave a grated carrot to decorate.
  3. Dissolve the agar-agar with water, the water must be at room temperature.
  4. If you prefer to make a non-vegan version of the recipe or you can’t find agar-agar, you can use sheets of neutral gelatin dissolved in water.

  6. Put a container to heat, pour the agar-agar and the orange juice without straining. Stir to integrate both liquids and also add the ginger and the cup of honey.
  7. Continue stirring. When it starts to boil, let it boil for only 2 minutes without stopping stirring. Remove from heat.
  8. Trick: Taste for sweetness and, if you feel like it, you can add more honey or some sweetener.
  9. Combine the carrot and orange zest in the same bowl. Pour the gelatin mixture into it and mix carefully.
  10. Take the gelatin to the container of your choice so that, when it cools, it takes the shape you want.
  11. First, let the carrot jelly cool at room temperature, then put it in the fridge. Leave it for a whole day so that it sets and has the ideal texture.
  12. Trick: To unmold the gelatin without problems, put it in two fingers of lukewarm water for 4 minutes.
  13. If you want, you can decorate the jelly with the grated carrot that you reserved for decoration. Cut the carrot jelly as you wish and enjoy.
