Carrot Hummus Recipe

Hummus is a very easy-to-make, nutritious, low-fat appetizer that contains no cholesterol or sugar, and is very rich in protein and fiber. This chickpea cream is a very popular dish in the Middle East, whose existence appears in very old writings. Some authors attribute the original recipe to ancient Egypt. It can be kept in the fridge for several days without altering its flavor and texture.

Carrot hummus has a flavor that varies between sweet and tart. Some recipes indicate how to make it only with carrots. The one detailed below also includes chickpeas.

Ingredients to make Carrot Hummus:

To prepare the carrots

• 2 carrots

• 1 splash of virgin olive oil

• 1 pinch of salt

• 1 teaspoon sweet paprika

• 1 clove garlic

For the hummus

• 1 can of canned chickpeas (drained and rinsed)

• 80 grams of virgin olive oil

• 2 tablespoons of tahini

• 1 teaspoon sweet paprika

• 1 teaspoon ground cumin

• 1 pinch of salt

• 1 lemon (juice)

How to make Carrot Hummus:

Preheat the oven to 200ºC. Line a baking tray with non-stick paper. To make the roasted carrot hummus, peel the carrots and cut them into sticks of a similar size so that they cook evenly. Arrange the carrot sticks on the tray without crowding them. Add a splash of olive oil, a little salt and paprika on top.

Bake for 30 minutes. After that time, she places the garlic cut in half and cooks 10 more minutes. Take the carrot out of the oven when it is soft and let it cool. Place the drained and washed chickpeas, olive oil, tahini, paprika, cumin, salt to taste and lemon juice in the processor along with the carrots and garlic. Blend all the ingredients until you have a homogeneous paste. Check that there are no lumps and, if necessary, rectify with salt or some other seasoning.

Tip: If you can’t find canned chickpeas, you can soak and cook chickpeas until they are soft so they can be mashed. Use the same amount indicated in the recipe.

Serve the carrot hummus in a bowl with a splash of virgin olive oil and paprika. You can spread it on cookies, toast, nachos or whatever else you want.

Tip: If at the end of the recipe the texture of the hummus is too dense for your taste, you can adjust it by adding a little more water.

How to prepare the tahini sauce for carrot hummus?

Tahini or tahini sauce is one of the main ingredients in any Arabic hummus recipe, but you may not have it at home at the moment. If this is the case, do not worry, it is very easy to prepare it:

1. Place 2 tablespoons of sesame seeds (roasted in a pan for 5 minutes) in a food processor.

2. Add 4 tablespoons of water or olive oil.

3. Blend until smooth and voila! You will have an easy homemade tahini sauce.
