Carrot Gnocchi Recipe

Ingredients to make carrot gnocchi:

  1. 500 grams of ricotta cheese
  2. 100 grams of Parmesan cheese
  3. 2 carrots
  4. 200 grams of flour
  5. 1 pinch of salt

How to make carrot gnocchi:

  • Boil carrots to puree them.
  • Mix all the ingredients, including the puree, with a spatula and then knead with your hands until you get smooth dough.
  • Cover with a floured plastic and leave in the fridge.
  • After being refrigerated, it is cut into pieces the size of an orange.
  • It is stretched in the form of very fine long strips and cut said strip into small pieces.
  • Put water on to boil.
  • Add the gnocchi and when they rise to the surface they will be done.
