Ingredients to make carrot gnocchi:
- 500 grams of ricotta cheese
- 100 grams of Parmesan cheese
- 2 carrots
- 200 grams of flour
- 1 pinch of salt
How to make carrot gnocchi:
- Boil carrots to puree them.
- Mix all the ingredients, including the puree, with a spatula and then knead with your hands until you get smooth dough.
- Cover with a floured plastic and leave in the fridge.
- After being refrigerated, it is cut into pieces the size of an orange.
- It is stretched in the form of very fine long strips and cut said strip into small pieces.
- Put water on to boil.
- Add the gnocchi and when they rise to the surface they will be done.
