Ingredients to make Carrot Gazpacho:
- 2 units of Carrot
- 2 units of Tomato
- 1 unit of white onion
- 1 pinch of fresh parsley
- 1 pinch of dried thyme
- 1 unit of red or green pepper
- 1 pinch of garlic paste
- 1 pinch of salt
- 1 pinch of black pepper
How to make Carrot Gazpacho:
- The first step to make this summer recipe is to pre-list the ingredients.
- We must peel and grate the carrots in a bowl as seen in the photograph.
- Add the pepper in medium squares and the tomato in hulls without seeds.
- Add the onion and fresh parsley, take our ingredients to a blender and process with a little water until it has the consistency of gazpacho.
- Add a tablespoon of olive oil, garlic paste, salt and pepper to taste. As with the cucumber gazpacho, if you wish you can pass the mixture through a strainer to make it finer. In my case and by preference, I decided not to do it to take advantage of all the nutrients and fiber that our easy gazpacho recipe contains.
- Serve the carrot gazpacho recipe with a little parsley sprinkled on top as shown in the photograph, the idea is to consume this recipe cold. And if you want to accompany it with an equally healthy dessert, don’t miss the fruit salad with jelly
