Ingredients to make Carrot Croquettes:
- A liter of milk
- 120g margarine
- 120g of flour
- 1 dl of olive oil
- 300g grated carrot
- Flour
- Bread crumbs
- Egg
- Oil for frying
How to make Carrot Croquettes:
We heat the milk. In a saucepan, melt the margarine with a little olive oil, sprinkle the flour and fry it in the butter without letting it take on too much color. Once the roux (mixture of flour and butter) is formed, add the milk little by little and stir continuously so that no lumps form. When we have made the béchamel, we add the grated carrot, letting it cook so that it takes on flavor. Season the croquette dough with salt. Pour the dough into a tray impregnated with a little oil and let it rest and cool for about 2 hours. We make balls that we will go through flour, beaten egg and breadcrumbs. We fry at the moment that we are going to consume the fried carrots, in abundant hot oil. We serve accompanied by tomato sauce and salad.
