Carrot and chocolate cupcakes recipe

Ingredients to make Carrot and Chocolate Cupcakes:

  • 2 eggs
  • ½ cup coconut oil (measured when solid)
  • 2 cups of chopped carrot
  • 1 tablespoon grated ginger
  • 2 tablespoons of honey
  • 2 tablespoons of chia seeds
  • 1 cup whole wheat flour
  • 1 cup brown (or coconut) sugar
  • 2 dessert spoons of chemical baking powder or baking powder
  • ½ cup 85% chocolate chips or chips

How to make Chocolate Carrot Cupcakes:

  1. In a bowl we mix the dry ingredients: flour, brown sugar, chia and baking powder. Book.
  2. In the blender, we beat the carrots with the eggs, coconut oil, grated ginger and honey.
  3. Mix the dry ingredients with the liquid ones until obtaining a homogeneous and smooth mass to make the carrot and chocolate muffins.
  4. Add the slightly floured chocolate pieces to the dough. The flour will prevent these from sinking and staying at the bottom of the carrot and chocolate muffins.
  5. We distribute the dough in the appropriate molds and bake the chocolate and carrot cupcakes in a preheated oven at 180 ºC for about 15/20 minutes, or until poking them in the center with a toothpick it comes out clean.
  6. Remove the carrot and chocolate cupcakes from the oven and let them cool before serving
