Carnival Ears Recipe

Carnival ears are a traditional sweet from Galicia and León. A very simple and quick recipe to make, in addition, they are delicious and crunchy. The typical thing about this sweet is that it must be shaped to look like pig ears, so you must be a bit skillful to make them as similar as possible. On the other hand, to make them rich and crunchy, the dough must be made very thin.

Ingredients to make Carnival Ears:

  • 250 grams of flour
  • 50 milliliters of anise or brandy
  • 1 egg
  • 50 grams of butter or lard
  • 80 grams of icing sugar
  • 100 milliliters of lukewarm water
  • 1 orange and lemon zest
  • 1 pinch of salt
  • 3 teaspoons of icing sugar
  • 1 glass of oil for frying

How to make Carnival Ears:

  1. To make the fluffy Carnival ears recipe, first put warm water in a bowl and add different ingredients: melted butter, a pinch of salt, aniseed, egg, sugar and lemon and orange zest.
  2. Beat all the ingredients until they are well integrated.
  3. You should know that you can add butter, lard or cow lard. In addition, to provide that fruit flavor you can put the zest of both orange and lemon.
  4. In our case we have added both. The Carnival ears with cow butter are also delicious!
  5. Add the flour and mix little by little with a few rods until you have to do it with your hands.
  6. You can also make delicious Carnival ears with yeast, but in our case we have prepared this recipe without yeast.
  7. Knead until there is a dough that detaches well and is manageable. Next, cover the dough and let it rest for 1 hour.
  8. Trick: you can vary the amount of flour and need a little more, the same dough asks for it.
  9. Take pieces of dough and stretch it with a rolling pin until it is very thin.
  10. And, if the dough sticks to the roller, paint it with a little oil to handle it better.
  11. the dough is already stretched, cut it into large pieces. You can also make smaller portions and make individual pieces.
  12. Heat a frying pan with plenty of oil over medium heat, be careful and do not put the heat too high, otherwise the Carnival ears will burn immediately.
  13. Next, add a strip of the dough to the pan and to give it the shape of an ear, with a toothpick in the center of the side you must move it a little while they fry.
  14. Leave them for a few minutes until you see that they are golden. Prepare all the Galician ears like this.
  15. Remove them and place them on a plate with kitchen paper to absorb the excess oil.
  16. Place them in a serving dish and sprinkle them with plenty of icing sugar. They are ready to eat!
