Ingredients to make Caramel Apple Crepes:

  • 2 eggs
  • 2 cups of liquid milk
  • 1 cup of Flour (140 grams)
  • 1 pinch of salt
  • 50 grams of Butter
  • For the filling
  • 2 apples
  • 4 tablespoons of Sugar
  • 1 Teaspoon vanilla extract
  • 2 cups of Water (480 milliliters)
  • for the caramel
  • 8 tablespoons of Sugar
  • 2 tablespoons of cold water
  • 10 tablespoons of boiled water

How to make Caramel Apple Crepes:

  1. To make these tasty sweet pancakes, we are going to start by pouring the milk and the eggsinto a bowl.
  2. Beat with an electric mixer for approximately 2 minutes, or until the eggs are broken down and the ingredients are unified.
  3. Add the flour and salt, mix for 2-3 minutes until everything is unified and a thick and homogeneous mixture is obtained.
  4. With only these 2 steps you already have the mixture of caramel apple crepes prepared!
  5. Bring a pan to the heat and add a small piece of thereserved butter (we will repeat this step of adding a small piece of butter every 2 or 3 crepes), move the pan so that the butter is distributed throughout the base to prevent the pancakes from caramel apple stick together.
  6. Pour 3/4 of a ladle of the preparationof our sweet crepes into the pan and move so that the mixture covers the entire surface.
  7. If you want them thicker, pour a full ladle into the pan.
  8. When we notice that the edges begin to brown, lift the pancake and turn to cook them on the other side for a few seconds.
  9. If you lift them up and notice that they are still missing or are not golden enough as you like, leave them on the fire for a moment longer.
  10. Arrange on a plate or platter one on top of the other as you make them until you finish all the mixture of the caramel apple crepes.
  11. To make the fillingfor the apple and caramel pancakes, we are going to wash, peel and cut the apples into slices. Be sure to core the apples first before slicing.
  12. Bring the apple slices together with the sugar, the vanilla essence and the water on top, so that it covers them, all in a pot or saucepan over low-medium heatfor approximately 25 minutes until they soften and form a kind of apple compote. Once ready, remove from heat and let cool.
  13. Tip:If you prefer another fruit or filling to assemble the sweet pancake, you can add whatever you like.

  15. To make the caramelfor the apple crepes, we are going to place the sugar together with the cold water in a jug.
  16. Bring to heat so that the sugar begins to dissolve, stirring constantly to prevent the sugar from burning.
  17. When we have the sugar completely dissolved and it has taken on a golden color, remove from the heat.
  18. Add the boiled water to the caramel and mix for a moment until both ingredients are unified. Reserve for a moment until the time to use.
  19. Now the funniest and most beautiful step of all: the assembly! Take a pancake, add 2 tablespoons of fillingin the center and close the pancake.
  20. Cover with 1 tablespoon of liquid caramel (or amount to taste).
