Ingredients to make Carabineros Cocktail:
- For 4 people:
- Assorted lettuce leaves
- 8 carabinieri
- 25 gr. trout roe
- ½ avocado
- 1 leek
- Water
- parsley
- For the sauce:
- ¼ l. mayonnaise
- 1 tablespoon tomato sauce
- 1 teaspoon of whiskey
- juice of ½ lime
How to make Carabinieri Cocktail:
- Peel the scarlet shrimp, cut them in half lengthwise, leaving them attached at the tail.
- Put water in a saucepan, add the leek cut in half, a sprig of parsley and a pinch of salt.
- When it starts to boil, add the carabineros.
- Cook them for a couple of minutes.
- Put the mayonnaise in a bowl, add the whiskey, tomato sauce and lime juice and mix well.
- Clean the lettuce, drain it and chop it into fine julienne strips.
- Distribute the lettuces in 4 glass bowls.
- Peel the avocado, cut it into cubes and add a few to each glass.
- Place a couple of carabineros on top and water them with a little sauce.
- Garnish with some trout roe.
- If you do not have lime juice you can substitute it with orange or lemon juice.
- And if you like spicy, you can give it a touch by adding a few drops of Tabasco sauce.
